1 cup regular medium rice (Carolina)
6 cups milk *
2 egg yolks
1/2 cup sugar
2 Tbs. butter / melted
1/4 tsp. salt
2 tsp. vanilla extract
Whisk all ingredients together, except rice. Pour liquid into baking dish; add rice. Gently stir.
Bake in 325 degree oven for about 2 hours. Stir at least every half-hour. Remove from oven when bubbling; before all milk is aborbed. Let cool and stir. Remaining milk will be aborbed. If necessary, add additional milk to desired texture.
* Optional: Use heavy cream as part of the 6 cups of milk.
