Jackie's Salad Dressing

3 Tbs champagne vinegar or red wine vinegar
1 tsp Dijon mustard
1 minced garlic clove
mix well
Then: slowly pour in 1/2 c olive oil and whisk until emulsified.
Add 1 tsp salt
1/2 tsp pepper

Pour as much as you want onto salad
